Vegetable Lentil Curry

This simple, yet flavourful vegetable lentil curry is the perfect way to introduce your kids to Indian-inspired cuisine. It’s packed with at least six different types of vegetables and is full of flavour thanks to the aromatic spices.

  • Ingredients:
    • 1 onion
    • 2 cloves garlic
    • 1 tbsp curry powder
    • 1 sliced pepper
    • 200g green lentils
    • 1-2 tsp turmeric
    • 600ml vegetable stock
    • 1 grated zucchini
    • 1 grated carrot
    • Salt and pepper to taste
    • 1 can diced tomatoes

In a medium saucepan, heat two tablespoons of oil over medium heat, then add the onion and garlic and sauté until the onion is softened. Add the curry powder and sauté for a further minute.

Add the lentils, pepper, turmeric, vegetable stock, zucchini, carrot, salt and pepper and bring to a simmer. Simmer uncovered for 15 minutes or until the lentils are cooked through.

Add the diced tomatoes and simmer for another 5 minutes. If the curry is too thick, add an extra ½ cup of water or vegetable stock. Serve with steamed brown rice.

Tofu & Veggie Stir-fry

  • Ingredients:
    • 3 cloves garlic, minced
    • 1 onion, diced
    • 1 red pepper, sliced
    • 200g firm tofu
    • 1 medium carrot, sliced
    • 3 tbsp vegetable oil
    • 1 bunch of broccoli, cut into small florets
    • 2 tbsp soy sauce
    • 2 tbsp honey

Heat the vegetable oil in a large skillet or wok over medium heat. Add the garlic and onion and cook, stirring, for two minutes, then add the red pepper and cook for a further two minutes.

Use a kitchen paper towel to gently press the excess moisture out of the tofu, then add the tofu to the skillet. Add the carrot and broccoli and fry for five minutes or until the vegetables have softened and the tofu has begun to crisp.

Add the soy sauce and honey and stir to combine. Cook for a further minute, then remove from the heat and serve the tofu & veggie stir-fry with steamed brown rice.
